Black pearl cocktail at the beach hotel byron bay
When we first tasted this at the Green Room (the cocktail bar at the Beach Hotel in Byron) we were blown away. Our Apple Pye shrub came through clearly yet layered into a cocktail of pure magic. It uses rum from the local Husk distillery and native finger limes. When you are in Byron next, go here, the cocktails are all incredible.

How to make the Black Pearl:


 

 

45ml Husk Spiced bam bam Rum 
15ml Apply Pye Shrub
15ml Lemon Juice
15ml Finger Lime syrup
Spoonful of finger lime marmalade
Egg white
3 x mint leaves

Shake all ingredients with ice and double-strain into a martini glass. Garnish with mint.
