What is a Shrub?

A fancy old time drink you won’t believe you’re only just discovering. 

Using a method that goes all the way back to the Middle Ages, shrubs are fresh seasonal fruit and herbs that are preserved by fermentation in vinegar. Our shrubs are made the same way they would have been 500 years ago, by cold pressing and juicing whole produce and using homegrown and foraged herbs. They are made by hand, in small batches, without using heat to pasteurise or preserve.

The result is nutritionally dense and wildly delicious. A cordial that can be added to sparkling water to make a too-good-to-be-true botanical soda with a kick.

Why are they called 'Shrubs'?

Shrub is an old English word for these kinds of fruit and vinegar preserves. Probably originating from the Arabic word 'sharab' meaning 'to drink' as shrubs were brought to 15th century England and adapted to medicinal tonics in early apothecaries.

Shrubs were very popular in colonial America where they were used in cocktails and during the prohibition era shrubs boomed as an alcohol free alternative, served in bars and homes, utlising whatever fruity abundance was around.

Our shrubs are made traditionally, with cold pressed fruit and herbs that are fermented. Store them in the fridge and they will last you months.
